Casey Jones had to keep Aunt Corene’s Chocolate Pound Cake behind lock and key at the bank until it was time to take photos or we wouldn’t have had anything to take pictures of! Whether you volunteer to bring dessert to Christmas dinner or you just need a good piece of chocolate cake, Casey’s favorite cake is the perfect solution!
Aunt Corene’s Chocolate Pound Cake
Cake Ingredients:
½ cup Crisco
2 sticks margarine
3 cups sugar
5 eggs
Dry Ingredients:
1 ½ tsp baking powder
½ tsp salt
3 cups all-purpose flour
½ cup cocoa
1 cup milk
1 ½ tsp vanilla
Cream Crisco and butter, then add sugar and beat well. Add eggs, one at a time. In a separate bowl, mix together, dry ingredients. Alternate, adding dry ingredients & the milk and vanilla mixture to the main bowl, beating well throughout the process. Cook in greased and floured bunt pan at 325 degrees for 1 hour and 10 minutes. Let cool completely before applying the icing.
Icing Ingredients:
1 stick margarine
½ cup milk
2/3 cup cocoa
2 cups sugar
1 tbsp vanilla
Mix ingredients in sauce pan and bring to a rolling boil. Boil about 2 minutes stirring constantly until icing begins to thicken slightly. Take off heat and let the icing thicken some more. Don’t let thicken past a pouring consistency. Pour over cake until covered. The icing should harden into a fudge-like consistency.
